    Thanksgiving isn't only about the turkey! Mardi will teach us to prepare some delicious accompaniments that can stand on their own, with or without the turkey. We will make a delicious Corn Custard, Sweet Potato Soufflés, Balsamic Roasted Root Vegetables, and Hot Cinnamon Candied Apples. Come and learn to make these easy and delicious fall favorites.

 Knife skills are essential to great cooking. This class teaches you how to
use your knives correctly. You learn what the cooking terms, small dice,
julienne, etc. mean, and also how to make these precise cuts. While we
are chopping we will also be making Minestrone to enjoy as our meal!

Our sharpening service is available during class.
The cost is only $3 per blade.

   Bob and Mardi, have been making and enjoying tamales for years. They will be sharing their secrets for making authentic red tamales with you. Come and learn the traditional methods, recipes, and tricks to make delicious red tamales. (a staple of southwestern dining). Our recipes will include: Red Chile Sauce (from dried red chiles, Beef & Pork Tamale Fillings, Masa for Tamales. Make and Take home 2 dozen tamales. This class is limited to 12 students so please sign up early.

    The Basics of Gourmet Cooking is a beginning series of cooking class perfect for 
cooks who are just starting out or would like to refresh their fundamentals. The 8 week
series of classes consists of lectures, demonstrations, and hands-on-classes exploring
a wide variety of culinary concepts.
    Mardi has designed this series of classes to teach you good, basic cooking skills.
We will learn, create, and enjoy a new menu each week, including a dessert of a
different fresh fruit each week, paired with a different cheese each week.
