PART 1 |
The Road
to Great Cooking! is a NEW series of
thorough, cooking fundamentals classes.
The series is taught in two -one week sessions.
The classes are from 10 am-2:30 pm.
Monday through Friday.
Cost is $595 per session

There are two parts to this exciting "Road Trip" with the
first week beginning MAR 7 and the second starting MAR 14. 2016
It's similar, in some ways, to my
Basics of Gourmet Cooking Course
but, I am teaching this one as a two-part series designed
to arm home cooks with a solid arsenal of culinary skills
for everyday cooking.
We will be on our feet, almost the entire time so please wear closed toe,
comfortable shoes. You will receive 45 hours of hands-on
instruction during both sessions. Approximately 50 recipes and also
other class handouts
We use high-quality
ingredients; many picked fresh from our gardens.
Our goal is to teach
you to be a skilled, independent cook, one who
doesn’t have to always use recipes, to create delicious meals.

SESSION 1 |
Monday: KNIFE SKILLS,
SOUPS AND STOCKS |
We start our Road
to Great Cooking Sessions with Knife Skills and Soups/Stocks.
You will learn the basic cuts: mince, dice, and slice, then use our new
skills to
prepare Gazpacho, Minestrone, and Cream of Broccoli Soups. |

Tuesday: GRILLED CHICKEN,
HOMEMADE DRESSINGS |
Session Two of our
Road to Cooking we will learn to create a beautiful Grilled
Chicken
and Fresh Vegetable Salad with Home made Mayonnaise, Lemon Aioli, Lemon
Thyme Vinaigrette |

Wednesday: Great
BREADS |
Session Three we are on The Road to making great Bread. You will learn the science of
bread making and create some simple but delicious breads:
Rosemary Bread, Dutch Oven Bread, and Salt and
Pepper Grissini.. |

Thursday:
SAUTÉING
AND SAUCES |
Session Four teaches us the fundamentals of sautéing and creating
fantastic pan sauces. We will make: Sautéed Chicken with Piccatta
Sauce, Lemon Parsley Sauce, Pork with
Orange Sauce, Port Wine Sauce, and Red Wine and Shallot Sauce for Beef
and Lamb |

Friday:
THE ROAD TO GREAT
EGGS |
Our last session in
week one On The Road we will concentrate on Eggs!
We will make some fabulous dishes that you will want to serve over and
over;
Omelets, Soufflés, Frittatas, and Quiches |

PART 2 |
The Road to Cooking is

SESSION 2 |
Monday: DESSERT
FUNDAMENTALS |
Dessert basics is our
focus for today’s Road Trip. We will learn to prepare; Genoise,
Ganache, and Pate' a Choux. |

Tuesday:
WORKING WITH CHICKEN, FISH AND SHELLFISH |
In today’s class
you will learn to break down and fabricate Chicken, Fish and Shellfish.
Then grill, sauté, and steam them. |
|
Wednesday: MASTERING
BEEF, PORK AND LAMB |
In Session Eight you are going to learn how to break down and
fabricate Beef, Pork,
and Lamb. We will then grill, roast, and sauté these proteins
and finish them with some delicious sauces. |
|
|
|
Thursday:
PERFECT
PASTA |
There's
almost nothing like fresh homemade pasta! In Session Nine you will
learn
to create several different fresh pastas then serve them with some
wonderful but
simple sauces. We will make basic pasta dough with Semolina Flour, and
Red and
Green doughs too. |
|
|
Friday:
THE ROAD TO
COOKING WITHOUT A RECIPE |
In our final session we will prepare
a meal from ingredients without using recipes.
A "Market Basket" of various ingredients will be provided for you to cook
from. |
