Begin with a nice
choice or prime
chuck roast. Try to find one with
about 30% fat and 70% lean. |
|
|
By choosing your own piece of meat and
using your own kitchen with your own
sanitation practices, you will be assured
your ground beef is safe and wholesome.
It also will taste so great,
you won't want to go back! |

On your *sanitized cutting board,
cut the
chuck into about
one inch cubes. |
|
Place the meat in
the jar of your food processor and run for about 4-5 minutes. Test a small
hand full
to
be sure it is the texture you want. |
|
You may also grind your cut up meat
with your stand mixer grinding attachment.
You can cut the meat into strips for this.
Use the disc with small holes. |

Of course you can also use the old fashioned hand powered grinder. (they
work great!) |

This only takes a few minutes and the
result is absolutely worth it! With the lack
of oversight in many meat processors,
this is just one way of protecting your
family from a potentially deadly
E-coli caused illness. (or death)
The culprits in most safety recalls are;
the pre-packaged "chubs" of ground beef
and the pre-made ground beef patties.
Just because they come from a large
processor you may have heard of,
does not mean it is safe to eat. |

* To sanitize your cooking tools, cutting boards and
surfaces (countertop, etc). Make a solution of 1 tablespoon of household
bleach in
one gallon of water. It doesn't make it better to use more bleach. You can
then use it in a
spray bottle or as a rinse. Spray or wipe
your surfaces and allow to air dry. Sanitize
your counters and cutting boards and utensils regularly to kill bacteria. |
