Turkey Mole

6 Servings 

Sauce Ingredients:

1 medium onion, finely chopped
1 large tomato, peeled, seeded, and chopped
¼ cup fresh cilantro
2 tablespoons plus 2 teaspoons chili powder
2 tablespoons chopped raisins
2 tablespoons unsalted smooth old fashioned style or freshly ground peanut butter
1 ounce unsweetened chocolate, finely chopped
1 garlic clove, minced
½ teaspoon salt
½ teaspoon sugar
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
1/8 teaspoon ground anise seed
1 ½ cups chicken stock
vegetable oil
6 - 3-ounce 1/2-inch-thick turkey breast slices

 

 
 
 
 
 
   

For Sauce:

Add onions to heavy large nonstick skillet over low heat.
Cover and cook until soft, stirring frequently, about 8 minutes.
Add next 12 ingredients and stir to combine.

Meanwhile, bring chicken stock to boil in a small saucepan.

Gradually stir stock into vegetable-spice mixture. Cover partially and simmer until
sauce thickens, stirring occasionally, about 45 minutes. Taste and adjust seasoning.
 (Can be prepared 1 day ahead. Cover and refrigerate. Reheat sauce before continuing.)

 Heat large nonstick skillet over medium heat. Brush lightly with oil.
Add turkey and cook until light golden and no longer pink in center, about 3 minutes per side.
Transfer turkey to plates.
