duck carcass press. Ours is from France (of course)
and is made from polished brass. This screw-type press
will generate the necessary power to extract the juices from bones.
Also use for lobster. This is a tool made to be strong
enough for rugged restaurant use, but beautiful enough
to display in the finest kitchen.
