Rosemary Roasted Potatoes

Makes about ½ cup

Yield: Serves 6

INGREDIENTS:
6—10 Potatoes
¼ Cup Extra Virgin Olive Oil
2 tbsp Fresh rosemary, chopped
Salt, to taste
Fresh ground pepper, to taste


Preheat oven to 375 degrees.

METHOD:
Scrub new potatoes and cut into quarters (no need to peel).
In a large bowl, combine Olive Oil with rosemary, salt and pepper.
Add potatoes and mix well to just coat potatoes.

Spread on a large cookie sheet in a single layer.
Roast on middle rack in oven for approximately 35-40 minutes.

Do not turn potatoes while roasting.
