Delicious Sandwiches for Hot Summer Dining!

Gingersnap Ice cream Sandwiches, Chocolate Waffle Ice Cream Sandwiches, Chocolate Chip Ice Cream Sandwiches, the list is
endless. Hey, a sandwich is a sandwich, and when it is 105°F
in Tucson, an ice cream sandwich, or two, for dinner seems
almost reasonable and prudent.
Start with homemade vanilla ice cream, layer it with two crispy
cookies, and enjoy! My favorite recipe for vanilla ice cream,
contains no raw eggs, takes about 5 minutes to prepare, 
and is ridiculously easy to make.
Mix the creams, sugar, salt, and vanilla together:
chill and freeze. While the ice cream is freezing, you can prepare
your favorite cookie recipe to layer with the ice cream.
*Cook’s Note: I haven’t tried using raw cookie dough to make these,
I can be very noble (sometimes) and wait until they are baked.
If you are one of the unfortunates amongst us, and reside with
someone who requests at least two courses per meal, you can add
an equally delicious and simple Caprese Sandwich made with ripe
summer tomatoes, fresh mozzarella, and garden-fresh basil.
Add some extra-virgin olive oil, salt, and freshly cracked pepper,
and you have a simple but delicious entrée for an
alfresco picnic, lunch, or even a simple dinner.
