The Holidays are coming!
 

It seems, every year we are surprised by the
inevitable march of the Holidays. This year is no different.
You will see our classes beginning to reflect the season as
we are excited for the return of many of our favorites:

 Sausage Making Workshop

Making sausage is a beautiful thing!
 Saturday, Nov 9
You will be able to learn to chose the meats
and spices and incorporate them into wonderful
sausages. We will grind, mix and stuff our way
into a bounty of yummy goodness!
Make and Take home 2lbs of fresh, homemade sausage.


Tamales Making Workshop


Saturday, Nov 16
Here is another of our year after year favorites.
You will learn all about making traditional Red
Chile, Meat Tamales. We will make these wonderful
treats from scratch and you will participate in it all.
Learn to mix the masa until it is just right, then
spread the masa onto the corn husks and apply
 the filling. (don't forget your olive!) Roll and
fold the tamales and take home 2 dozen.

If you have come to class before, you know I love Mexican
and Southwestern food. Itís because I am a native Tucsonan
and besides they are amazing foods and can be very complex
and sophisticated. I have included a list of essential ingredients
for your southwestern pantry, and iI want to share my recipe for
table salsa via my beloved friend Olga. Enjoy!

 
 

Ten (ish) Essential Ingredients for your Southwestern Kitchen

1.       Limes
2.
       Good flour and corn tortillas
3.
       Red Chiles; dried, ground, or in canned sauce
4.
       Green Chilies, fresh and canned
5.
       Garlic and Cilantro
6.
       Tomatoes; fresh and canned
7.
       Beans, black or pinto and canned or fresh
8.
       Onions; red, green, yellow or white
9.
       Avocado
10.
   Mexican Oregano and Cumin

We will be celebrating  the
opening of our new event area,

Bula Bula!
We will be able to seat 40 guests!
 

We have some exciting classes coming up in November
and throughout the Holiday Season! This November we are
scheduling some classes during the day on Friday.
 I am really excited about a new one; Turkey Mole Poblano.
This is "old school" traditional Mexican cooking that is not
often seen in our part of the world. A complex and delicious
blend of chocolate and chilis. Fabulous! Also, be sure to
watch for Gluten Free Thanksgiving.
 In December, watch for our
annual, "Mom & Me" Decorate and take Gingerbread Houses class.
It is always fun, and you and the kids can be as
creative as you like. We will take care of the mess!

January 11, 2020 is when we begin our next

An 8-part series designed to arm home cooks
  with a solid arsenal of culinary skills
 
for gourmet cooking.
It will continue for eight Saturday afternoons.
Single Classes are available.
