How to "get your Italian on!"
 
 

We are hosting 5 different Italian cooking classes in September,
as I was building the menus, I realized that I really love Italian
cooking and there are some essential ingredients I always have on hand.
Here they are, and the reasons why, I included them on the list.

 Mardi’s 15 essential ingredients for great Italian cooking

1. Garlic: Duh. Go to the San Agustin Mercado on Thursdays to
get many choices of some really flavorful garlic!

2. Extra Virgin Olive Oil: Buy and use your favorite, you don’t have
 to cook with the more expensive (and generally more flavorful)
oils, you can use less expensive oil to cook with.
Watch for the Lowdown on Olive Oils next month.

3. Tomatoes: Use fresh homegrown, or heirloom are the best;
but Roma’s will generally have the best flavor if you don’t
have the other two choices. San Marzano canned tomatoes
are also really good.

4. Red Pepper Flakes: Use to POP the flavor in your sauces.
When using them in your sauces, they are not used to
create heat, but to enhance the other flavor’s in your sauce.

5. Pasta: Your choice.

6. Parmigiana Reggiano Cheese: Buy the best you can afford.
IT IS WORTH IT. And it lasts a long time. NOT the green can!

7. Basil: Grow your own! Go to Trader Joe’s and buy a plant.
Even I haven’t killed a basil plant.

8. Anchovies and Anchovy Paste: Don’t be wimpy these are
amazing flavor builders!

9. Capers: OMG! these will instantly build intrigue and interest into
your dish. Bob planted a caper bush in June in the backyard and
 I am eagerly awaiting capers! I will brine them when they are ready.
