Peel grapefruits with a vegetable peeler, trying not to remove pith, only skin.
In a large glass jar, mix the peels and the alcohol.
Store in a cool, dark place for 10-30 days.
After it has steeped for 10-30 days make Simple Syrup.
Boil the water, add the sugar and stir to dissolve.
Strain the peels out of the jar and add the simple syrup.
You can keep your Pumpelmocello in the large container or put it in
smaller bottles for gift giving and convenience at this point and chill!
