Vegetables with Macadamia Nut Butter

 

Makes 8 side dish servings.

INGREDIENTS:
╝ cup butter
2 tablespoons ground macadamia nuts or almonds
2 tablespoons macadamia nut, walnut, almond, or olive oil
1 tablespoon snipped parsley
2 pounds fresh vegetables such as asparagus, baby carrots, fennel, sweet peppers, squash, leeks, eggplant, tiny new potatoes, zucchini or broccoli.

 THE METHOD:

In a small saucepan combine butter, nuts, oil and parsley. Cook, uncovered,
over medium heat for 5 to6 minutes or until nuts are toasted, stirring occasionally.

Prepare and grill vegetables, brushing occasionally with nut butter.
Sprinkle with salt and pepper.
 

Alternately you could steam or sautÚ the vegetables then add the nut butter.
