INGREDIENTS:

1 thick-cut well marbled strip steak about 1 pound and 1 ˝ inches thick

1 tablespoon mixed whole peppercorns

Salt

1 teaspoon vegetable oil

1 tablespoon butter
 

Pan Sauce

2 tablespoons minced shallots

2 tablespoons cognac, bourbon, or red wine

˝ cup flavorful dark stock

2 tablespoons unsalted butter at room temperature

Finely chopped parsley for garnish
