We meet here then proceed to Queen Creek, AZ to the Olive Oil Mill,
and Pork Shop! We will journey via van to Queen Creek Arizona to
enjoy a tour and olive oil tasting at Arizona’s only producing olive oil mill. Cuisine Classique will provide a delicious picnic lunch at the mill! Continental breakfast with Mardi’s coveted Blueberry Cream Muffins,
Coffee, Bottled Water, Sodas, and Road Snacks are also included!

Advanced Classic Cookery Series:
Session Two; Cheese making

This session we will make Mozzarella, Ricotta, Farmers Cheese,
and Goat Cheese. Everything you always wanted to know about
making cheese. Mardi has been making her own cheeses for
5 years and is eager to show you how.

Chile Rellenos are Mardi’s favorite chile dish to prepare. She will show
you how to roast, peel, seed, stuff, and cook the peppers. We will also prepare Olga’s Salsa, Refried Beans, and Pickled Vegetables, with Sopapillas for dessert. All our southwestern series lunch classes
are served with Prickly Pear Lemonade, Ice Tea, and Water

Session Seven: Desserts

We will explore the wide world of sweets this week and learn to
prepare some basic dessert favorites including cheese cake, genoise
with chocolate ganache frosting, choux pastry, and chocolate soufflés.
This session we will also enjoy grilled chicken, with a Mixed Green
Salad with Sherry Vinaigrette.

with Creamy Parmesan and Garlic Dressing, and Chocolate Hazelnut Pastries for dessert.
