In Session five of the Basics of Cooking Series we are going to learn to
prepare, rice, pasta, and polenta. We will also steam, sauté, grill, and
bake various fresh vegetables and enjoy them with Grilled Chicken, a
fresh Green Salad, and of course, fresh fruit with cheese for dessert.

Come learn to make the national dish of Spain. Paella is a delicious
mélange of rice, vegetables, sausage, chicken, seafood, and saffron.
It can be made many different ways and inspires much debate about the
chosen ingredients among aficionados! We will make our own paellas
with a partner, and our choice of ingredients! Enjoy them with Fennel
and Orange Spiced Olives, Mixed Green Salad with Sherry Vinaigrette, Lemon
Sorbet for dessert.

Advanced Classic Cookery:
Session One: Pasta!

We continue our Cooking Class Series with Advanced Basics, this is
the third series of classes of fundamental cooking skills. We venture
into more difficult techniques and ingredients in this series, these are
also good classes for the cook who wants more in depth information
than is generally provided in a two hour class. We will learn how to
make; pasta, cheese, puff pastry, pates and terrines, wine, how to
smoke food, brioche, and how to preserve foods through drying in
separate sessions.
In session one we will make different types of pasta using both
all-purpose flour, and semolina flour. We will make spaghetti, fettucine,
raviolis, tortellini, gnocchi, and lasagna noodles. Both with plain and
flavored
pasta doughs.
