month’s class is designed for both cooks and non-cooks.
Mardi has selected a menu for entertaining and will demonstrate
how
to prepare two versions of each recipe; one version for cooks,
and one version for non-cooks, or cooks with no time! Our menu
includes a
starter of Sherried Brie Puffs, Greek Shrimp Salad, Rustic
Rosemary
Bread, Lemon Sorbet with Fresh Mint, and cool Mojitos.

includes extensive information on herbs and spices, including how to grow
your own herbs. We will use our fresh herbs in omelettes and compound
butters. We will prepare spice rubs for Grilled Chicken Breasts, and make
Curried Chickpeas, and Sauteed Apple Parfaits with Cardamom Cream for
Dessert.

Two is all about Tacos. We will prepare Shredded Beef,
Chicken and Fish Tacos, Olgas’s Salsa, Rice, Albondigas (meat

dessert.

Knife skills are
essential to great cooking. This class teaches you how to use your knives
correctly. We learn what the cooking terms, small dice, julienne, etc.
mean, and, also how to make these precise cuts. While we are chopping we
will also be making Gazpacho to enjoy. Please bring your 8-inch chef's knife to
class. Our sharpening service is available
during class.

Session Eight: Hors’d Oeuvres

Our eighth week we
will learn to prepare some classic and some new appetizers. We will also
learn to build a beautiful and delicious cheese tray. We will conclude our
session by by sampling the appetizers, enjoy chocolate dipped strawberries
for dessert, and planning our menu
for week nine.

Mardi will show us how
to prepare some delicious shrimp recipes.
We will make shrimp cocktails, Coconut Shrimp, Shrimp Tempura, and Shrimp
Burgers. This is a relaxed class focusing on our enjoyment of
food and cooking. We prepare our recipes then sit down and enjoy
dining and socializing.

Session Nine: Wine and Food Pairing

In our final
session on intermediate basics, we will prepare a five course meal
from a menu we will create in session eight, and learn to pair our
dinner with four different wines. This session also includes
information on storing, serving, and tasting wine.

Session Three: Enchiladas

You will learn to create some delicious enchiladas
using Shredded Chicken, Shrimp and Grilled Vegetables, Pico de
Gallo, Refried Beans, Calabacitas (squash with tomatoes and cheese)
and Empanadas for dessert.
